Cheesecake, of course, sounds beautiful and fashionable, but in fact it’s just a pie or cake, the main ingredient of which is soft cheese or just cottage cheese.

All cheesecake recipes can be divided into two main categories: with baked stuffing and «cold» cooking.

Baked cheesecake is considered to be a classic American dessert. In fact, their roots go to Eastern Europe. In Poland, Belarus, in the west of Ukraine there was always a lot of cottage cheese, and it was used to make «cheese cakes» and all kinds of casseroles. So you can say the famous Lviv cheese list — great-grandfather of American cheesecake. But the Americans, indeed, made their significant contribution by inventing a cheesecake oven not from cottage cheese, but from a smoother and greasy cream cheese.

As a basis for cheesecake most often bake a crust of grated cookies. This cake not only serves as a bottom for the pie, but also absorbs excess moisture from the curd filling. By the way, baked cheesecake is desirable not only to cool to room temperature, but also to withstand in the refrigerator 8-12 hours. Only then it will cut well and, more importantly, completely reveal its taste.

With «cold», non-baked cheesecakes, everything is much simpler. In fact, they are mousses based on cottage cheese or cream cheese, which are shaped by the addition of gelatin or other gelling agent. Sometimes white chocolate is added to the filling to maintain the shape. Such cheesecakes are especially good in summer, with fresh berries or with fruit sauces.

After inventing cheesecakes, Americans surprised the world (the culinary community outside the United States treats the American cuisine somewhat condescendingly). Now you can see this delicate cake even in the dessert menu of Italian restaurants, and after all the Italians in the field of desserts are ahead of the whole planet. But it’s not necessary to go for cheesecakes to either America or Italy. We will teach you how to cook one of hundreds of varieties of this delicacy at home.

For filling:

300 g of dark chocolate (70% cocoa)
500 g of fatty cottage cheese
1.5 cups of sugar
4 large eggs
2 tbsp. L. Cocoa powder
For the basis:

300 g chocolate wafers
1 tbsp. L. Sahara
50 g of butter
For decoration:

3/4 cup cream in fat content of 22%
180 g of dark chocolate (70% cocoa)
1 tbsp. L. Sahara


Step 1

For a base, soften the oil. Wafers grind in a blender. Without turning off the blender, add sugar and butter. Beat until mixture is homogeneous. Plug a baking dish with a diameter of 24 cm and butter it with oiled parchment. Transfer the resulting mixture into it, pound it and put it in a preheated oven for 200 ° C for 5-7 minutes. Take out, do not turn off the oven.
Step 2

For the filling, break the chocolate into small pieces, put it in a fire-resistant dish and melt on a water bath over a large saucepan, filled with slightly boiling water for a third. Remove from the bath, when some pieces have not melted, and leave — the chocolate will come itself. Cool a little.
Step 3

Cottage cheese rub through a sieve and whisk in a blender along with sugar and cocoa powder. Continuing to whisk, one by one add eggs. Pour in the melted chocolate, mix. Put the resulting filling into a mold, level the surface. Put in the oven, reduce the temperature to 180 ° C and bake for 1 hour. Allow to cool to room temperature, then transfer to the refrigerator for the night.
Step 4

The next day, the chocolate intended for decoration, break into small pieces, fold in a saucepan, add cream and sugar. Put on a small fire and cook until the mixture becomes homogeneous. Do not digest! Allow to cool slightly. Spread the cheesecake surface and return to the refrigerator for at least 1 hour.
Step 5

Sharp a thin knife between the walls of the form and cheesecake. Remove the shape, put the cake on the dish. Serve the room temperature cheesecake.
