Cake «Paris-Brest»

Brewed dough + strawberry + cream cream = very good result!

Ingredients:

Brewed dough:
200 g of cold water
100 g of butter
1 tbsp. L. Sahara
a pinch of salt
150 g of flour
4 eggs
1-2 tbsp. L. Almond petals

Strawberry Filling
200 g of strawberry puree
70 g. Strawberries, cut into slices
55 g. Of sugar
1 tbsp. L. Without a slide of cornstarch

Cream:
240 grams of sour cream / cream cheese
120 g of butter
100 g of powdered sugar

~ 200 g. Strawberries for decoration

Cooking method:

Brewed dough:
The oven is heated up to 180 * C.
Oil and water are placed in a saucepan, add sugar and salt, put on fire and, stirring, bring to a boil and dissolve the oil. Add flour, all at once and actively mix the wooden spatula without removing from the fire until the dough begins to lag behind the walls. Let the dough cool down a little.
Transfer the dough into a combine / mixer (attachment hook) knead the dough and add one egg. Do not add the next egg until the previous one completely fuses with the dough. The last egg is slightly shaken separately and added a little bit, focusing on the consistency. As a result, the dough should turn out to be shiny and smooth, not very liquid and keep the shape.
On parchment paper, draw a circle with a diameter of 18 cm. Transfer the dough into a pastry bag with a round nozzle and spread the dough along the intended circle. The next circle is «drawn» inside the previous one, the last one is placed on top of both «drawn» test circles. Lubricate the top with the remaining egg (if left) or with milk. Sprinkle the almond petals, lightly press them into the dough.
We send in the oven for 40 minutes. In the process of baking, the oven is not opened!

We take out of the oven. Immediately make a few punctures with a knife to get out steam and the dough is not soaked. We cool.

Strawberry Filling
Part of the strawberry puree is mixed with starch. The remaining part, together with the cut pieces of strawberries and sugar put on a small fire and, stirring, bring to a boil. Add the mixture of starch and mashed potatoes and cook for another minute, continuously stirring, until thick. Remove from heat, completely cool.

Cream:
Oil whisked with powdered sugar in a light cream, add cream cheese / sour cream, beat until a homogeneous lush mass is obtained.

With a sharp knife, cut the top of the dough, it will be a «lid».
Inside we pour out the cooled strawberry stuffing. The cream is placed in a confectionery bag with a nozzle «star» and we set the cream on the perimeter of the cake.
Strawberries to decorate the regime in half and lay out on top of the cream, slightly pressed. Cover with a test «lid». On top, if desired, sprinkle with powdered sugar. Let’s cool a couple of hours in the fridge and … Have a nice tea!
