Austrian curd-cream cake

Very gentle, moderately sweet, with a pleasant hint of citrus on the palate. Curd felt quite clearly. And what I especially liked it, the basis is a soft biscuit. Pleasant in all respects a dessert: delicious, not too complicated and requires quite a bit of time to prepare. I advise!

You will need:


55 g flour
40 g of corn starch
2-3 eggs (depending on their size)
60 g sugar
35 g butter unsalted butter (melted)
1 tsp vanilla extract (or 2-3 g of vanilla sugar)
1 tsp lemon zest
a pinch of salt

Cottage cheese and cream part:

6 grams of gelatin
280 grams of cottage cheese (fat content of 9% or more)
120g caster sugar
110 g cream
400 ml whipping cream (35-38% fat)
1/2 teaspoon lemon peel
1/2 teaspoon orange peel
juice of half a lemon
juice of half an orange
a pinch of salt

Fruit jelly:

150 g apricot jam or preserves (without pieces of fruit)
3 tsp transparent jelly cake *
2 tsp lemon juice
5-6 tbsp water

I used the company Dr. Jelly Oetker. Sold in small bags of blue. Here such:

How to cook:

1. Sponge:
Flour mixed with starch, sift and mix until uniform.
In a separate bowl mix eggs, sugar, vanilla extract, zest and salt. Beat with a mixer for 5-6 minutes on medium speed until the mass will increase by 2.5-3 times and will air and lush.
A quarter of the egg mass to mix with the flour and starch, a little stop and then enter the remainder. Gently stir until smooth, without lumps. At the end enter the melted butter, stir.
Heat oven to 180 C or 350 F.

2. The bottom of the split mold lay a baking paper. Pour the dough back, smooth. Bake 30 minutes or until golden sample on a toothpick: if coming out of a dry sponge, then he is ready. Totally cool it, without removing from the mold. Along the edges of the cooled sponge cake walk with a sharp knife to separate it from the walls.

3. Cottage cheese and cream part:
Soak gelatin in a little cold water, literally 3-4 tbsp.
Cottage cheese through a sieve, if it is with obvious grains. Remove the zest from the lemon and orange and squeeze the juice.
In a separate bowl mix together cottage cheese, rind, juice strained through a sieve, sour cream, salt, and powdered sugar. Mix until uniform. I wanted to achieve a smooth texture, so I decided to further shake up the mix blender to break the grains of curd. Pour back into the bowl.
The swollen gelatin is heated in a water bath and stir. Enter in the curd mixture quarter of gelatinous weight, stop and add the rest.
In pre-chilled bowl whip the cream to the strong peak. Put the cream cheese in the mass and mix gently to complete the connection.

4. The walls of the split mold to build an acetate film *. Pour the cottage cheese and creamy on the part of the cake, smooth and put into the refrigerator, covered with foil, at least 2 hours.
* If it does not, then do not worry, you can omit this point and do without it. When the cake is completely ready before removing the mold wall, you will need them to warm up a bit. You can use an ordinary hair dryer.

5. Fruit jelly:
In a small saucepan mix the apricot jam, jelly, juice, and water. Stir until the liquid jelly compound. Put on medium heat and bring to a boil, stirring. When a boil, reduce heat to low and simmer for another minute. Remove from heat and strain through a sieve, not to leave pieces of fruit. Pour the jelly on cooled cake, smooth tilting in different directions form and put into the refrigerator for another hour.

Then decorate arbitrarily fruit / berries and serve.
